….. can become irrational and irritable as they decline help and deny anything wrong whilst insisting they are okay.

As they become colder still, their shivering will decline to the point of stopping altogether. It is a sign that their life is now in danger and they start to pass into stages of unconsciousness. The other notable characteristic is a change in colour as the person becomes pale, with signs of blueness (cyanosis) appearing on the body.

Please note that the indicators discussed may not all be present at the same time, if at all.
